Coconut Date Energy Bites

Makes 14-16 balls
Ingredients
1 cup rolled oats
1 cup shredded unsweetened dried coconut
1/2 cup roasted pumpkin seeds (aka: pepitas)
10-12 pitted Medjool dates, chopped
1 teaspoon pure vanilla extract
1/4 cup water, added incrementally, more if needed
Zest of one orange
Pinch of salt
Extra coconut for rolling (optional)
Instructions
Roast pumpkin seeds in a small skillet over medium-high heat for 5-10 minutes, mixing frequently. Set aside and let cool completely.
Add the dates, oats, coconut, vanilla, salt, orange zest, and pumpkin seeds to your food processor. The mixture will be dry and crumbly – let it process for a minute just to break down some of the bigger ingredients.
Slowly add about 1/4 cup of water until the mixture becomes wet and a bit sticky. Scoop out tablespoon-sized portions and roll into balls. Then roll in extra coconut to prevent them from sticking together. These can be eaten at room temperature, but are good cooled in the fridge.
